What are macarons?

A macaron (pronounced mack-a-ROHN) is a confection made up of two round, flat, almond-flour-based cookies sandwiching an emulsified filling like ganache, buttercream or jam. Any variation in color or flavor is simply a variation in the filling, plus some food coloring added to the shells. They have a smooth, crisp shell and a moist, chewy interior. They are made with egg white, almond flour and sugar.

What macaron flavors can you make?

I can create any custom flavor you can think of for your dessert! However, I do offer a list of flavors on my order form if you need some ideas.

Do I need to place an order in advance?

Yes! I do require advance notice for all of my custom macaron orders. Small orders may require two weeks in advance; large orders over 100 need at least 3-4 weeks in advance.

How do I pay for my macaron order?

I accept cash and payment through Sqaure invoice (credit card, PayPal and Apple Pay).

Please note that all special design orders must be paid in full when the order is accepted. You will receive an invoice for your order along with information on how to pay.

Is there a minimum or maximum number of macarons required to order?

TRADITIONAL MACARONS - Minimum of 3 dozen per order - 1 flavor and 1 color unless I have desired macaron colors and flavors on hand. Contact me to confirm.

CUSTOM DESIGNS AND CHARACTER - Minimum of 2 dozen per order - 1 flavor and 1 design or character.

Are macarons really Gluten Free?

Naturally macarons are a gluten-free pastry. The shell is made with sugar, almonds and egg whites. However, not all of my custom flavors are gluten-free such as: chocolate chip cookie dough or biscoff cookie butter. I am happy to discuss gluten free macaron flavor options when you place your order.

How do I store my macarons?

Store in the Refrigerator: If you’re not going to eat all your macarons in one day, store them in an airtight container in the fridge so they stay fresh for up to three days. Macarons that are stored in the fridge for longer than three days will start to loose their texture and get soft or dry and crumbly.

Remove macarons from the fridge about 20 minutes before serving. Keep them in their container until they come to room temp to avoid condensation which will ruin the exterior of the macaron.

Store in the freezer: If you need to keep macarons fresh and tasty past three days, you’ll need to freeze them. When kept in the freezer, macarons will keep well for about 2 to 3 months without losing any of their texture or flavor. Avoid freezing any macarons with jam filling. Before freezing, you’ll need to make sure you’ve packed your macarons carefully and securely to prevent freezer burn. I place my macarons on their side in an airtight plastic container lined with two to three layers of parchment paper. The goal here is to have your macarons snugly nestled in the container so they freeze without being exposed to dry air in the freezer. The delicate texture of macarons means that they can be easily freezer burned.

When you’re ready to serve freezer stored macarons, let them defrost fully for about 30 minutes in their container before eating.

To bring out their great flavor and texture, macarons should be eaten at room temperature. But you do you!

Is there a fee for Delivery?

I am based in San Jose, California, where I bake and create all of my custom macarons. If you order online, you can either pick up at my home in San Jose for no charge, or I can deliver the macarons for a fee. Contact me for more details.

Do you offer gift boxes and party favor boxes?

Yes, I have specific packaging for 6 and 12 macarons. Additionally, I have a number of options for 1, 2, 3 and 4 macaron party favor boxes.

Are you licensed and do you have insurance for venues?

Yes, I am a licensed Cottage Food Operation (CFO) in Santa Clara County and I am insured.
